Makes 16 Balls
Ingredients
1 cup raw cashews
¼ cup shredded coconut
2 tbsp raw cacao powder
1 tbsp raw virgin coconut oil, softened
2 tsp rice malt syrup
1-2 drops pure peppermint oil
Method
- Pulse the cashews and shredded coconut in a food processor until you get fine crumbs. Stir through the cacao powder, coconut oil and rice malt syrup.
- Stir through the peppermint oil. You may want to do this one drop at a time, tasting as you go. I add 2 drops, but it is quite strong so you may prefer less.
- Roll the mixture into balls and store them in the fridge, as the coconut oil may start to melt at room temperature.
