Happy Pancakes

  • 2 cups whole wheat pastry flour
  • 2 tablespoons baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cup almond or soy milk
  • 1 pouch applecinnamon
For the face:
  • Bananas, raspberries and blueberries.

  1. Start by mixing the flour, baking soda, and salt together in a bowl.
  2. Combine the milk and add to the dry ingredients.
  3. Mix together until a paste-like consistency is formed.
  4. Spray a frying pan with non-stick spray, and pour batter into pan in circular shapes, flipping once you see the bottom start to brown.
  5. Once the pancakes are fully cooked, transfer to a plate, slice banana, and arrange fruit on top of pancakes in face-like shape as shown above.
